Classic tapioca pearls
These dark, chewy spheres are made from cassava starch and usually sweetened with brown sugar. They are the original boba: soft outside, slightly bouncy inside. They pair best with milk teas and anything creamy.
Popping boba
Thin-skinned spheres filled with fruit juice that burst in your mouth. They work well in citrus and fruit teas, where a little extra brightness is welcome.
Jellies
Lychee, grass jelly or coconut jelly add a lighter, springy texture. They are a good choice if you find pearls too heavy.
How to enjoy them
