Matcha is powdered green tea made from leaves that are shaded before harvest, then ground very finely. The word “grade” simply describes how it is meant to be used.
Ceremonial grade
Made from the youngest leaves, ground fine, with a vivid green colour and a smooth, naturally sweet taste. It is meant to be whisked with water and sipped on its own, or in a simple matcha latte.
Culinary grade
A little more robust and slightly more bitter, which is exactly what you want when it has to stand up to milk, sugar, fruit or flour. It is a good fit for smoothies, baking and layered drinks.
How to choose
- Colour: brighter green usually means fresher powder.
- Texture: it should feel like fine silk, not sand.
- Storage: keep it sealed, cool and away from light.
Making a simple matcha
Sift one to two teaspoons into a bowl, add a splash of warm (not boiling) water, whisk into a smooth paste, then add cold milk and ice. That paste is also what we pour over our Strawberry Matcha.
